Healthy Eats in the Virgin Islands

I’m super excited for this post! I finally get to share my meal prep from where I live! Which can really be so different than most other places, where food is readily available. Where I live food is way expensive, sometimes you can’t even find it, and rarely organic. It’s nice to hit up the Bordeaux farmers market and agricultural fairs when they’re open, but local fresh ingredients aren’t always available or exactly what I feel like cooking with.

So here’s everything I bought today!

I thought it would be even more beneficial to share the receipt so you know that I was able to get all of this (3 days worth of meals) for only $55! I even broke my reusable grocery bag with how heavy everything was!

So first, everything went in the fridge. The bananas were peeled and bagged for the freezer for smoothies.

Then the meals began to prep! Here’s what is on the menu for the next 3 days:

 

Breakfast

Warm water with fresh-squeezed lemon, sprinkle of cayenne and a splash of apple cider vinegar; then shortly after a smoothie (1 c. blueberries, 1/2 banana, 2 tbsp. chia seeds, 1 c. almond milk)


Morning snack/second breakfast

2 slices of guacamole or almond butter on toast (depending on what I'm in the mood for!)
*I would have preferred to get gluten-free bread, but oh well!


Lunch

Salad with crispy tofu (edamame, cucumber, parsley, mint, olive oil, fresh-squeezed lemon, and baked tofu)


Snack

Celery & cucumber sticks with guacamole


Dinner

Baked sweet potato, Brussels sprouts, quinoa, parsley


Snacks on hand in case of munchies

Chia pudding
